Vegan Caribbean Soup




Ingredients:

- 2 tablespoons coconut oil

- 1 onion, chopped

- 3 cloves garlic, minced

- 1 bell pepper, chopped (any color)

- 2 carrots, diced

- 2 stalks celery, diced

- 1 sweet potato, peeled and diced

- 1 can (14 oz) coconut milk

- 4 cups vegetable broth

- 1 can (15 oz) black beans, drained and rinsed

- 1 cup corn kernels (fresh or frozen)

- 1 tablespoon Jamaican curry powder (or regular curry powder)

- 1 teaspoon ground cumin

- 1 teaspoon dried thyme

- 1/2 teaspoon smoked paprika

- Salt and pepper to taste

- Juice of 1 lime

- Fresh coriander or parsley for garnish

- Cooked rice or quinoa (optional, for serving) I love quinoa with everything! Great for keeping you filled and away from the snack jar!


Instructions:


1. Heat the coconut oil in a large pot over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.


2. Add the minced garlic, chopped bell pepper, diced carrots, and diced celery to the pot. Cook for another 5 minutes, stirring occasionally, until the vegetables start to soften.


3. Stir in the diced sweet potato, coconut milk, and vegetable broth. Bring the soup to a simmer.


4. Add the drained and rinsed black beans, corn kernels, Jamaican curry powder, ground cumin, dried thyme, and smoked paprika to the pot. Stir well to combine.


5. Let the soup simmer gently for about 20-25 minutes, or until the vegetables are tender and the flavors have melded together.


6. Taste the soup and adjust the seasoning with salt, pepper, and lime juice as needed.


7. Once the soup is ready, ladle it into bowls. Garnish with fresh coriander or parsley.


8. Serve the vegan Caribbean soup hot, either on its own or with cooked rice or quinoa if desired.

All you have to do when making a soup with a pressure cooker is put all the ingredients in at the same time, put it on full heat until it starts to hiss, the turn it to the lowest setting and it's done in 7-10 mins! Absolutley makes the flavour to die for too!
