Raw Vegan Key Lime Pie

 



Ingredients:


For the Crust:

- 1 cup raw almonds

- 1 cup dates, pitted

- Pinch of salt


For the Filling:

- 2 ripe avocados

- 1/3 cup fresh lime juice

- Zest of 2 limes

- 1/4 cup pure maple syrup or agave nectar

- 1/4 cup coconut cream (the thick part from a can of full-fat coconut milk)

- 1 teaspoon pure vanilla extract

- Pinch of salt


For Garnish:

- Lime slices

- Fresh mint leaves


Instructions:


1. Start by making the crust. In a food processor, blend the raw almonds, pitted dates, and a pinch of salt until they form a sticky dough-like consistency.


2. Press the almond-date mixture evenly into the bottom of a pie dish or springform pan to form the crust. Make sure to press it firmly to ensure it holds together.


3. Next, prepare the filling. In the same food processor (no need to clean it), combine the ripe avocados, fresh lime juice, lime zest, maple syrup or agave nectar, coconut cream, vanilla extract, and a pinch of salt. Blend until smooth and creamy, scraping down the sides of the processor as needed.


4. Taste the filling and adjust the sweetness or tartness by adding more maple syrup/agave or lime juice if necessary.


5. Once you're satisfied with the flavour, pour the filling over the prepared crust in the pie dish, spreading it out evenly with a spatula.


6. Place the Key Lime Pie in the refrigerator to chill for at least 2 hours, or until it's set and firm.


7. Before serving, garnish the pie with slices of fresh lime and sprigs of mint for a beautiful presentation.


8. Slice and serve your Raw Vegan Key Lime Pie chilled, and enjoy the creamy, tangy goodness with every bite!
